Answer and solution
Answer (b) Albumin
Solution

Sort each protein by shape: globular proteins dissolve in water, fibrous ones do not.
- Fibrous proteins. Their polypeptide chains run side by side and are held together by hydrogen bonds and disulphide bonds. This gives long, thread-like fibres that are insoluble in water.
- Globular proteins. Their chains fold up into a compact, roughly spherical shape. Polar groups end up on the outside, where they hydrogen bond with water, so these proteins are soluble in water.
Protein Shape Found in In water Fibrin fibrous blood clots insoluble Albumin globular egg white, blood plasma soluble Myosin fibrous muscle insoluble Collagen fibrous skin, tendons, bone insoluble - So. Albumin is the only globular protein here, so it is the water-soluble one. The answer is (b).
The idea to keep. Structural jobs need fibrous, insoluble proteins (keratin, collagen, myosin, fibrin). Proteins that travel in body fluids are globular and water-soluble (albumin, insulin, haemoglobin).
