JEE Main 2025 · 7 April · evening · Single correct · +4 / −1
Given below are two statements :
Statement (I) : On hydrolysis, oligo peptides give rise to fewer number of α-amino acids while proteins give rise to a large number of β-amino acids.
Statement (II) : Natural proteins are denatured by acids which convert the water soluble form of fibrous proteins to their water insoluble form.
In the light of the above statements, choose the most appropriate answer from the options given below :
- (a) Statement I is incorrect but Statement II is correct
- (b) Both Statement I and Statement II are incorrect
- (c) Both Statement I and Statement II are correct
- (d) Statement I is correct but Statement II is incorrect
Answer and solution
Answer (b) Both Statement I and Statement II are incorrect
Solution
Chemistry ma’am · 4 steps
Read each statement word by word: one wrong Greek letter and one wrong protein type sink both.
- Check Statement I. Oligopeptides and proteins are both chains of amino acids joined by peptide bonds. Hydrolysis breaks those bonds and gives back α-amino acids in both cases: a few from an oligopeptide, many from a protein. Proteins do not give β-amino acids, so Statement I is incorrect.
- Fibrous versus globular. Fibrous proteins such as keratin and myosin are long parallel chains and are already insoluble in water. Globular proteins such as insulin and albumin fold into spheres and are soluble in water.
- Check Statement II. Acids, heat or change in pH do denature proteins. They unfold the water-soluble globular proteins, which then coagulate into an insoluble form, as when egg albumin turns solid on boiling. Statement II names fibrous proteins instead of globular, so it is incorrect.
- So. Both statements are incorrect, which is option (b).
The idea to keep. Natural proteins are always built from α-amino acids. Denaturation turns soluble globular proteins into insoluble ones. Fibrous proteins are insoluble to begin with.
